*For those that asked – Yes, this is the recipe my mom uses to make her VERY popular Lemon Bars*
Lemon Bars are one of my favorite desserts. We have had the BEST recipe in our family for about 10 years now. My mom bought a cookbook of family recipes that a private school was selling when we lived in Seattle, WA. And this recipe alone makes the entire cookbook worth its weight in gold! Here’s the note at the top of the recipe:
We almost made the mistake of assuming that this was the same recipe that has been quite popular the last few years. This one came from Norway via an 80-year-old dear friend. There are just enough variations to make it just that much better!
Lemon Bars
Yield: 3-4 Dozen
Prepare: 20 minutes
Bake: 40 minutes
- 2 cups sifted flour
- 1 cup butter, softened
- 1/2 cup sifted powdered sugar
Preheat oven to 325 degrees. Mix the above ingredients together well. Pack in 10×14 inch, un-greased, baking dish (I use a glass one). Bake 20 minutes.
- 4 eggs
- 2 cups sugar
- 6 tablespoons lemon juice
- 2 teaspoons grated lemon rind (I use the rind of one lemon)
- 1/4 cup flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar
In mixing bowl, beat eggs lightly. Add sugar, lemon juice, and rind. Sift together flour, baking powder, and salt. Beat into egg mixture by hand. Pour over cookie layer as soon as it come from oven. Increase oven temperature to 350 degrees. Bake another 20 minutes, until done. Sprinkle with powdered sugar, cool, then cut into squares.
